Poor internet despite 100mps plan, split level home on opticomm network

Live in a single storey but double brick house. I use an old modem/router and I am looking to go with a different ISP. I need someone to help with choosing router, best placement in the house and it looks at ethernet or mesh solutions for optimised speed

Ethernet cable repair It looks like when we first moved into this house the Telstra technician made changes to the wiring to make adsl connection work. However I no longer have adsl and I want my Ethernet connection again. Can this be patched up so that the Ethernet connection works again

Our home internet keeps dropping out intermittently across the whole house. NBN (iiNet) to the modem is working fine, but our Google WiFi mesh system (shown in the photo) seems to be the issue. We have multiple Google WiFi points across a three-storey, double-brick home, and devices often lose connection for ~10 seconds at a time before reconnecting.
