I want to remove chimney that is in my kitchen,after removal we need to fix tiles on the roof of the chimney area, access is easy

I’m looking to have bespoke shelving and storage made either side of the chimney breast. The dimensions on either side are different which is why I’m looking for bespoke rather than just buying furniture. They need to be sturdy and well made. I’d like a storage cupboard at the bottom and then shelving up the rest of the wall. I’d like an arch added to the top like in the picture I’ve included. The blue photo is the space currently.
