Find an experienced gas fitter in Brighton VIC

I need someone (with experience) to connect my gas bottle (CGA320 head) to my soda stream (TR21-4 female). I have the hose and necessary implements. Every time I connect it, the gas bottle just leaks C02 and doesn't pass through the hose. Rendering it all useless. Not really sure what I'm doing wrong. The deliverable must be the fully functioning connected gas bottle to the soda stream. I'm happy to pay for any extra parts required.

Looking to build an attic space, found gas pipe that needs to be rerouted. I have a Siemens gas stove top, when I try turning the gas on there is no spark (or even clicking) although the gas is still coming through fine. Research suggests the the spark module will need replacing however I can't be 100% certain this is the issue. I need someone with experience in repairing kitchen appliances to repair.
