Oven not working. Old model Simpson Model 83-614 Top right hand knob not turning

I have recently had a IKEA kitchen renovation completed at my property in Blacktown. Everything seems to be working except for the OVEN. I will attach specific model information. Cooktop working, issue is with oven and requiring assistance. I have been advised wiring has been complete, may just be a matter of not knowing how to use but not sure NEED HELP !
