Repair / replace steps from garage to backyard

We’re looking for someone to remove approximately 10cm of topsoil from our front garden and prepare the area for landscaping. The garden is approximately 12m × 7m, with the areas to be excavated marked in yellow. The excavation does not need to be perfectly precise, as the garden shape will be refined later. We strongly prefer manual excavation, particularly around the two established olive trees. A small machine may be suitable for limited open areas away from the trees, if appropriate. Protecting the olive trees and their roots is the highest priority. Please do not dig underneath or close to major roots. If a substantial root is encountered, work around it rather than cutting or damaging it. Couch grass roots can be removed, but please distinguish these from olive roots. If unsure, leave the root and check. Existing perimeter garden beds do not need to be excavated. Please loosen the existing soil with a shovel so new soil can later be incorporated, taking care around existing irrigation. Had a plumbing issue where paving and decking had sunk. Plumbing and paving now fixed but decking step and corner needs lifting again to be level. Would like quotes to make level again.
