Clear and level backyard, sides and front yard

Redoing the back garden and the current garden bed has gone rampant with weeds. We’ve currently pulled lots of the overgrowth out but would like to excavate the area and then fill with soil to level. We’ve got recycled bricks that we will be creating a pergola area with in the corner down the track so want to build up the area to be level and minimise chances of weeds down the track. I have some shrubs that have grown too high at the front of my lowset ranch style house. They are now just above my gutters and so I want them cut down by about a metre in height so that I can keep them that size. These shrubs would total about 15 metres in length.
