They need to be sealed (waterproof), light enough to be moved regularly from room to room by staff, yet sturdy enough for us to attach steel folding trestle legs. The tables can be constructed of whatever material you suggest as they will always be clothed with linen table cloths. Want to reseat tap seats and then install new valves, taps and shower head. Also seal up taps and head with silicon. The shower wall is ~5mm sheet and a hollow cavity behind, so not sure if need some sort of backing for the silicon.
