I'm looking to have a large inset shelf put into to separate showers. It would involve removing tiles, cutting in the shelf, water proofing and retiling.

It will not accept numbers.
That means its hollow and good news that you can get the max depth on your inlet without damaging the other side of the wall.
What's on the other side of your shower wall, is it plasterboard or cement rendered? This way you can determine if it is hollow or solid.
