In my experience the most memorable good byes are the ones that are given both sincerely and from the heart. You said you were looking for something different and again in my experiences both those qualities are rare.

The really cool thing about doing it that way you can't stuff it up because it is all true.
Have you considered playing paintball, nothing like a few farewell bruises. I would recommend Top Gun Paintball in Keperra.
Simple is best. Take her to an iconic outdoor Sydney location (ie north head in manly). Arrange fish and chips (or simple canapés) & some Bollinger! Then perhaps with just a couple of key colleagues take her to Tetsuyas or somewhere she is unlikely to go ever by herself. A first real fine dining experience is one in a life time. Don't try so hard. I've been a career EA & I remember the work & the people, not the goodbyes. Smile. Breath. Keep it simple & from the heart.
also, instead of pasting dried flowers , take group photo of all friends or individually, holding a flower each
